Bi but only attracted to one guy

There's this guy and we've been on and off for around 2 years now when ever we do date we always end up hurting eachother
He's the reason I realized I'm bi but I've started to realize I don't feel attracted to other guys just him

Being bisexual doesn't always mean your attraction to each gender is the same, just that you're attracted to more than one. So it sounds like for you you're more attracted to women, but there's at least one guy (and maybe more in the future) who you find attractive. That's totally fine, and if bi is the label that feels right for that attraction, then you get to use it.
